Scones


I tried quite a few scone recipes. And yet never quite satisfied until I came across with this recipe in Cooking with Annie (安璞 知美 滋味). The scones have this marvellous smooth and soft texture that you simply can't resist. They are excellent for serving afternoon-tea parties or just an indulgence for self.

Self-rising flour 230g
Baking powder 1 teaspoon
Pinch of salt
Butter 70 g
Egg 1, large
Sour cream 1/2 cup

1. Preheat to 200C (400 F or gas mark 6)
2. Sift the self-rising flour, baking powder and salt into a big bowl
3. Cut the butter into small cubes and mix with flours until in forms of crumbs.
4. Mix the egg and sour cream and the crumbs until you get a soft dough. Store the dough in refrigerator for 30 minutes.
5. Spread the dough and cut with a cookie cutter to get little round dough. You can get at least 8 round dough.
6. Put in oven for 10-15 minutes or until golden.
7. Serve with whipped cream or clotted cream and any kind of jams.
